Date and Oat Quick Bread

Steps

  1. Grease and flour a 9-by-5-by-3-inch loaf pan.

  2. Heat the oven to 350 F.

  3. Combine the flour, baking powder and salt in a mixing bowl; add sugar. Stir or whisk to blend thoroughly.

  4. Add the oats and dates to the dry mixture and stir to blend.

  5. In a separate small bowl, whisk the egg with milk. Stir in melted butter and vanilla. Add the wet mixture to the flour mixture and stir until evenly moistened.

  6. Pour mixture into the prepared loaf pan.

  7. Put the quick bread in the preheated oven immediately and bake for 55 to 65 minutes, or until a toothpick comes out clean when inserted in center.

  8. Let the loaf cool on a rack for 10 minutes before turning it out of the pan.

  9. Once the loaf has cooled, wrap and store overnight for best flavor.

  10. Slice the date bread and serve with butter, cream cheese, or a flavored spread.

  • 2 1/2 cups  all-purpose flour

  • 2 1/2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1/2 cup quick rolled oats

  • 1 package (8 ounces) dates (chopped)

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 large egg

  • 1 1/4 cups milk

  • 3 tablespoons melted butter

  • 1 teaspoon vanilla extract
